Chocolate Mousse with Tarts of Olive Oil
For all chocolate lovers, we have this recipe which, despite being sugar-free, maintains its delicious texture.

Preparation Method
- Separate the egg yolks from the egg whites. Place the egg whites in a large bowl along with a pinch of salt and beat until stiff with a whisk. Set aside.
- On the other hand, chop the chocolate and melt it in a bain-marie. Remove from the heat and leave to cool.
- Add the egg yolks and mix very well until they are incorporated.
- Add the beaten egg whites and mix with gentle movements so that they do not fall apart.
- Divide the mousse into individual bowls and leave in the fridge for at least six hours.
- Serve with some currants on top, a sprinkling of grated chocolate and some pieces of Olive Oil and Cinnamon Tarts.
