Vegetable Broth with Asparagus
Consume the asparagus from one end to the other, without food waste. This vegetable broth with asparagus is a good option for those parts that are too fibrous.

60 g small chopped onion

1 tablespoon olive oil

100 g finely chopped carrot

150 g courgette

150 g sliced mushrooms

2 teaspoons of salt

1 dl water

100 g ripe tomatoes

50 g asparagus
Preparation Method
- Sauté the onion in hot olive oil. Peel the carrot, cut it into half slices and add it to the onion. Add the courgette, also cut into half-moons, and the mushrooms. Season with half the salt. Cover and leave to sweat on a low heat for about 10 minutes.
- Add the boiling water and as soon as it starts boiling again, add the diced tomatoes and the pasta. Season with the remaining salt and cook for another 10 minutes. Add the asparagus, cut into pieces.
