Vegan Rice Pudding
Healthy creamy sweet rice that is vegan and therefore dairy and egg free.
Ingredients

1/2 litre of water

100g rice

1 cinnamon stick

2-3 pieces of lemon rind
Preparation Method
- Put the water in a pan over high heat and add the rice. When it starts boiling, cover and bring to a slow boil. Cook until almost dry
- Add 1/2 liter of coconut milk, cinnamon, lemon peel, and sugar
- Cook uncovered until rice is soft and creamy (about 15 minutes more)
- Serve with Cinnamon Olive Oil Pies to add a special touch.
