Mushroom Spaghetti with Shiitake and Parsley Sauce
Spaghetti with mushrooms and herbs. For those days when time to cook is short, a quick, simple and vegetarian recipe.
Ingredients

1 bunch of parsley

20cl olive oil

1 clove of garlic

500g spaghetti

5 tbsp soy sauce with shiitake

A pinch of pepper
Preparation Method
- Make the parsley pesto by mixing the parsley bunch, the garlic clove, olive oil and a little salt. Set aside.
- Cut the mushrooms into thin slices. Heat a frying pan with olive oil and sauté the mushrooms until golden brown.
- At the end of cooking, season the mushrooms with a pinch of shiitake soy sauce and pepper.
- Meanwhile, boil in a large pot of water and cook the spaghetti for 5 minutes.
- Season the spaghetti with the shiitake soy sauce and rice vinegar.
- Arrange the spaghetti on plates. Arrange the sautéed mushrooms and some of the parsley pesto.
