Sardines and Peppers Bruschettas

Ingredients

  • 4 slices of corn bread
  • 1 clove of garlic
  • extra virgin olive oil
  • 1 cup roasted red peppers
  • 1 teaspoon thyme
  • 2 cans of sardines in tomato sauce
  • chopped coriander

Preparation Method

  1. Rub the slices of bread with the garlic clove and drizzle them with a little olive oil.
  2. Arrange them on a baking tray and place them in a preheated oven at 180ºC for about 20 minutes or until the bread is nicely browned.
  3. Remove from the oven and on top of each slice, make a bed of roasted peppers mixed with the thyme.
  4. Add another bed of sardines in tomatoes, opened in half, and finish with finely chopped coriander.
  5. Serve immediately.
