Artichoke and Tomato Bruschetta

The Artichoke and Tomato Bruschetta is very tasty and has an artichoke, tomato, Parmesan cheese and mayonnaise filling on a slice of toasted bread.

Preparation Method

  1. Preheat the oven.
  2. Place the slices of bread on a baking sheet and toast lightly.
  3. In a medium bowl, combine the artichoke hearts, Parmesan cheese, onion, crushed garlic, chopped tomato and mayonnaise.
  4. Coat the lightly toasted French baguette slices with equal amounts of the mixture.
  5. The edges of the bread will tend to burn if not covered in the artichoke mixture.
  6. Arrange the slices in a single layer on the baking sheet.
  7. Grill in preheated oven 2 minutes, or until golden.
